This chicken salad recipe is savory and crunchy in a creamy sauce! It also is the most versatile recipe. This chicken salad can be served hot or cold, in a wrap, on greens or on bread. Any way you serve it up it is great! You will love it! If you need a new sandwich recipe try these delicious creations.  I have a great list there. While love love love this chicken salad sandwich recipe my all time favorite sandwich is the Caprese Sandwich.

Chicken Salad Recipe

This recipe is from my friend Di. She is a fabulous cook! How can you ever forget her amazing Monster Cookie Dough Dip! That is one the of all time favorite recipes here at Skip to my Lou.  Each year a group of us gather together to make sack lunches for our children’s teachers during teacher appreciation week.  Di always makes her Chicken Salad Sandwiches and is always asked for the recipe!

This chicken salad recipe has a secret ingredient… one I typically never cook with. In fact, I go to great lengths to not use this ingredient in my recipes, note my chicken and rice casserole and creamy chicken enchiladas.  While I was going to figure out a way to make a substitution, I realized it just works and this isn’t something we eat all the time! So the can of soup stays! Yes,  this yummy chicken salad has a whole can of cream of mushroom soup. You too will have to give it a try!

Chicken Salad Recipe

Serve this delicious chicken salad recipe hot or cold! It makes a great casserole or sandwich.

  • 4-5 cups cooked chicken (chopped)
  • 1 cup mayonnaise
  • 1 can cream of mushroom soup
  • 1-2 cups celery (chopped)
  • 1 medium onion (finely chopped)
  • 3/4 teaspoon salt
  • 2 small cans sliced water chestnuts (drained and chopped)
  • 1 cup sliced almonds
  • 2 Tablespoons pimento (chopped (optional))
  • potato chips for casserole topping
  1. Mix all ingredients together. Season with salt and pepper. Chill. Serve on bread, a bed of lettuce, half a cantaloupe or in a wrap. Delish!

    For casserole. place chicken salad in oven safe dish. Top with crushed potato chips and bake at 250 degrees for 30-45 minutes.

I am sure this chicken salad could be made with rotisserie chicken to speed up the prep time.   I speed it up with my Instant Pot.  Place four good sized chicken breast in the instant pot, along with 1/2 cup water, 2 carrots, 2 stalks of celery, half an onion, salt, and pepper. Cook at high pressure for 12 mins. Use natural release for 5 or 10 minutes for extra tender chicken.  No worries if you don’t have celery, onions , nd carrots it will cook just fine with salt and pepper. While the chicken is cooking I prepare the rest of the chicken salad ingredients.

If you like your chicken salad savory and sweet slice a couple cups of grapes in half and toss them in. Makes for a great chicken salad with grapes. Yum!

Kids jokes are sure to bring a smile and some laughter. Here are over 50 hilarious jokes to keep kids laughing.   As a mom, I love hanging out with my kids and their friends.  I seem to spend countless hours in carpools, volunteering at school, and coaching youth sports.  In all of these circles of kiddos, I like to think of myself as a fun mom. For me, cracking a few jokes, laughing, giving a high five, and just plain being silly is a great way to create relationships with kids.  Jokes are also a great way to kill a little time when you are trying to keep kids organized or a child occupied.  Waiting in line, waiting at a restaurant, waiting for the dentist!

However, my mind is not the steel trap that it once was!  I have heard countless jokes (mostly from my sweet tooth years of eating Laffy Taffy in my childhood) and yet I can never seem to produce more than one or two jokes from memory when needed.  So, I have compiled a long list of what I think are some pretty hilarious kid-friendly jokes.  I tested them on my own children (and husband) and we all were cracking up. Kids laugh at these! I just love to hear them laugh!  I think this is an easy list to try and learn, or just store in your phone for quick retrieval.

Let me tell you about the most amazing quiche EVER!  Everyone needs that one amazing recipe that they know is the best. You can be sure guests will love this recipe and leave wanting more. You might want to serve it with this overnight coffee cake. If you are looking for a casserole for breakfast instead try this is an amazing breakfast casserole. It is a bit unusual but I am always asked for the recipe! YUM!

Easy Quiche Recipe

This recipe, introduced to me by my sister-in-law, always gets rave reviews.  Go ahead and follow the recipe! Don’t leave out anything and use the cream, it does make a difference. I have seen my sister-in-law carry these quiche frozen in her carry-on, on an airplane!! You can make the mixture the night before and refrigerate, then the next morning pour into pre-baked crusts and bake or they can be frozen and reheated. Prepared either way it is delicious!

We are going to visit friends for a long weekend and I thought I would take some quiche to help with breakfasts. They are going to love this ham and quiche!  This recipe makes two.

Quiche Recipe

Quiche Recipe

The only quiche recipe you will ever need! 

  • 2 9” Pie crusts pre-baked
  • 1 Tablespoon finely chopped bell pepper (any color)
  • 1 Small onion finely chopped
  • 1 4.5 oz. can of mushrooms drained and chopped
  • 7 Eggs
  • 2 Cups heavy cream
  • 8 oz. grated Monterrey Jack or Colby Jack cheese grated
  • 6-8 oz. Swiss cheese grated
  • 12 oz. chopped ham
  • 1/2 Teaspoon vinegar
  • 1/2 Teaspoon salt
  • 1/4 Teaspoon dried tarragon
  • 1/4 Teaspoon dried parsley
  • 1/8 Teaspoon ground nutmeg
  • 1/8 Teaspoon garlic powder
  • 1/8 Teaspoon ground pepper

Pre-bake pie crust according to directions

    Pre-heat oven to 350 degrees

      In a large skillet, saute onion, green pepper, and mushrooms until onions are soft and translucent. Set aside to cool

        Lightly beat eggs together and then add cream and mix. Stir in cheeses, ham, vegetables and the rest of the ingredients. Divide filling between two pie crusts.

          Bake at 350 degrees for 50-60 minutes, until crusts are golden and filling is set. Eggs puff up beautifully! Baked quiche may be frozen and then reheated. Filling can also be made the night before and then put into crusts just before baking and

            This recipe makes TWO Quiche. Make one now and the other can be frozen for later. This quiche freezes beautifully and is great to keep on hand for unexpected guests or to take someone in need a meal.

There isn’t much tarragon, vinegar, nutmeg, mushrooms, peppers etc… but it all works together to make it delicious! So don’t leave those ingredients out. Trust me you are going to love this!

            Crock Pot Lasagna – a delicious weeknight meal

            This crock pot lasagna recipe is perfect to quickly put together so dinner is ready when you get home! I love that! Here are some more of my favorite crock pot recipes. The Crock Pot Mac and Cheese is always a hit.  I also love a quick dinner that can be made in a skillet! These skillet recipes make for an easy dinner.

            Slow Cooker Lasagna

            You will love this slow cooker lasagna. Ricotta, mozzarella and parmesan cheeses make a delicious cheese mixture that melts together for a gooey cheesy layer. This recipe is so simple you even use uncooked lasagna noodles and jarred pasta sauce. You can easily substitute cottage cheese for the ricotta and ground beef for the sausage. Make it gluten free by using gluten free noodles.

            Crock Pot Lasagna

            Delicious fix and forget it dinner. 

            • 1 lb Italian sausage
            • 2 jars (each 24 oz. spaghetti sauce)
            • 2 cups water
            • 1 lb. whole-milk ricotta cheese
            • 2 Tbs. chopped fresh flat-leaf parsley (optional)
            • salt and pepper to taste
            • 18 ruffle-edged lasagna noodles (not no-boil noodles, 1 box)
            • 1 1/2 lb. mozzarella cheese (grated)
            • 1/4 cup grated Parmesan cheese

            Brown sausage breaking up any large chunks, until the meat is browned,  about 10 to 12 minutes. Add the spaghetti sauce and water and bring to a simmer.

              In another bowl, stir together the ricotta, parsley, salt and pepper. Set aside.

                Spray inside of crock pot with cooking spray.  Spread a thin layer of the sauce on the bottom of the slow-cooker. Cover the sauce with a single layer of uncooked lasagna noodles (about 3), breaking the noodles as needed to fit. Spread about 1/3 cup of the ricotta mixture over the noodles. Top with about 2 cups of the sauce, then sprinkle with about 1 cup of the mozzarella and 1/4 cup of the Parmigiano-Reggiano. Repeat the layers 4 more times.

                  Cover and cook on low according to the manufacturer’s instructions until the noodles are tender and cooked through, about 4 hours.

                    Just follow the step by step pictures and you will be on your way to pumpkin heaven!  Lightly spray a 10″ X 15″ jelly roll pan with cooking spray. Line the jelly roll pan with parchment paper.  The cooking spray helps adhere the paper to the pan.  Give the top of the paper a coat of cooking spray.

                    • 1 teaspoon ground cinnamon
                    • 1/4 teaspoon ground cloves
                    • 1/4 teaspoon salt
                    • 3 eggs (large)
                    • 1 cup granulated sugar
                    • 2/3 cup canned pumpkin ((not pumpkin pie filling))

                    for filling

                    • 1 pkg cream cheese (8 oz., at room temperature)
                    • 1 cup powdered sugar (, sifted)
                    • 1/4 cup butter (, softened)
                    • 1 teaspoon vanilla extract
                    • Powdered sugar for decoration
                    1. Preheat oven to 375° F

                    Prepare Pan: Lightly spray a 10 inch X 15 inch jelly roll pan with cooking spray. Line the jelly roll pan with parchment paper. The cooking spray helps adhere the paper to the pan. Give the top of the paper a coat of cooking spray.

                      Combine flour, baking powder, baking soda, cinnamon, cloves and salt in a bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Mix in pumpkin. Stir in flour mixture. Spread batter evenly into prepared jelly roll pan.

                        Bake for 12 to 15 minutes or until top of cake springs back when touched. Don’t over bake. Immediately loosen and flip cake onto prepared towel. Carefully peel off paper.

                          Rolling Instructions Roll the cake up in the towel. Refrigerate cake until cool, about an hour. While cake is cooling prepare the filling.

                            Filling Instructions To make filling beat cream cheese, 1 cup powdered sugar, butter and vanilla until smooth. Gently unroll the cake. Spread cream cheese mixture over cake. Re-roll cake. Wrap in plastic wrap and refrigerate at least one hour.

                              Sprinkle with powdered sugar before serving.

                                Let’s get started making this delicious pumpkin roll.  Mix up the batter and spread into prepared pan.

                                This stuff is amazing. My boys (okay and me too) were totally taken with this goo. Oobleck defies Newton’s third law of motion–for every action, there is an equal and opposite reaction. It is a science lesson that is a lot of fun!  If you quickly smack it with your hand it immediately turns into a solid, instead of splashing or moving. If you slowly move it with your hands it reacts like a liquid. Cool! Needless to say, our oobleck took a lot of fist smacking! Our kitchen was filled with lots of “Wow,” “Cool,” wide eyes of amazement and much laughter!”  Everybody had a handful (or two) of fun, and we even had some great conversation about science.  “Is the oobleck solid?  Is it a  liquid? Is it a solid liquid?” Whipping up a batch of this stuff is a great way to learn while having lots of fun! Please read the comments on this post for the scientific explanation of what is happening.

                                 You only need a few easy ingredients that you probably already have in your pantry to whip up this amazing concoction.

                                • 2 cups cornstarch
                                • 1 cup water
                                • food coloring (optional)
                                1. To make your own oobleck mix 2 cups of cornstarch and 1 cup water in a bowl. If you want to color your oobleck like we did, add a few drops of food coloring to the water before adding to the cornstarch. It took some effort to mix the water and cornstarch. Try it out (hit it with your fist and pour it off a spoon to see if it works) before you give into the urge to add more water to make it easier to mix.  We played with our science experiment all afternoon, and when the kids weren’t playing with it I covered it with plastic wrap.

                                Want to try the best Chili Recipe? While I was away last week my husband George came up with his own Chili Recipe. Thankfully he saved me a bowl because it is really good. I mean really good, like the best chili recipe. In fact, if you read the comments someone used this recipe and won a contest.  Maybe I should change the name to award-winning chili recipe.  So if you have searched for the best chili recipe I think we have one for you. You will love the slow cooked chili full of flavor! Thank you George!

                                If you love a good chili try my Cincinnati Chili.  It is served over noodles.  I love serving this recipe to a crowd. If you like those one-pot meals my chili mac can be made in a skillet.  We also love this pressure cooker chili. It makes a super quick and delicious weeknight dinner. When we have all day to let something cook  Crock Pot Chili is always a crowd pleaser. It is a great stress free recipe when company is coming over.  Don’t forget to serve these chili recipes up with the World’s Best Cornbread. I promise you this recipe doesn’t disappoint.

                                The Best Chili Recipe

                                Just follow the instructions and you will have a blue ribbon chili!

                                George's Chili Recipe

                                The best chili recipe.. rich, robust and super delicious! Top with sour cream, cheddar cheese and jalapeños to really throw it over the top.

                                • 2 lbs lean ground beef
                                • 1 cup chopped onion
                                • 1 lb sage sausage
                                • 7 to 8 cloves garlic (finely chopped)
                                • 2 tablespoons chili powder
                                • 2 teaspoons ground cumin
                                • 1/2   teaspoon ground red pepper (cayenne)
                                • 1 teaspoon paprika
                                • 2- 6 oz cans tomato paste
                                • 1 3/4 cups beef broth
                                • 1-12 ounce bottle dark beer or ale (George used Ale)
                                • 3-8 ounce cans diced tomatoes with juice
                                • 2-15 oz cans southwest style pinto beans
                                • 1-15 oz can mild chili beans beans
                                • 1-15 oz can western style ranch beans
                                • 1-10 can mild Rotel diced tomatoes and green chiles (undrained)
                                • salt and pepper to taste
                                1. In a stock pot, over medium high heat brown beef and sausage, drain. Add in onion and garlic and cook over medium heat 8 to 10 minutes, stirring occasionally, until onions are translucent.
                                2. Add all the spices and cook 5 minutes over medium heat. Stir in tomato paste and let cook while opening the lids on all the cans. Add remaining chili ingredients; stir until combined. Heat to boiling for a few minutes and stir constantly then reduce heat to low. Cover, simmer 4 hours stirring about every 20 minutes to prevent sticking to the bottom of the pot.
                                3. Serve with crackers, cheese, or other things such as chopped jalapeño peppers or chopped fresh onions.

                                Chili is a great meal for a crowd. When a have a lot of mouths to feed we also serve walking tacos. They are always a huge hit!

                                This pumpkin sheet cake is the perfect fall dessert recipe. If you love pumpkin as much as I do you have to try my pumpkin chocolate chip cookies and this pumpkin bread recipe is the best ever! If you need a yummy dip for a party my pumpkin cheesecake dip will be sure to satisfy! You also don’t want to miss pumpkin muffins with only three ingredients. It doesn’t get any easier than that. My newest way to have pumpkin cake is utilizing the Instant Pot. This chocolate chip pumpkin bundt cake is divine!

                                Pumpkin Sheet Cake

                                • 4 eggs
                                • 1   cup granulated sugar
                                • 2/3 cup brown sugar
                                • 1/2 cup vegetable oil
                                • 1/2 cup applesauce
                                • 15- ounce can pumpkin
                                • 2 cups sifted all-purpose flour
                                • 2 teaspoons baking powder
                                • 3 teaspoons ground cinnamon
                                • 1/8 teaspoon ground cloves
                                • 1 teaspoon salt
                                • 1 teaspoon baking soda

                                Cream Cheese Frosting

                                • 6 Tablespoons cream cheese (softened)
                                • 6 Tablespoons butter (softened)
                                • 2 cups sifted confectioners' sugar
                                • 1 teaspoon vanilla extract
                                1. Preheat the oven to 350 degrees F.
                                2. Using an electric mixer at medium speed, combine the eggs, sugar, oil, and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt, and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13 by the 10-inch baking pan. Bake for 30 minutes. Let cool completely before frosting.
                                3. To make the icing, combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on the cooled pumpkin cake.

                                This crock pot mac and cheese is creamy and delicious! The best part it is an easy dinner recipe that won’t heat up your house.

                                I love slow cooker recipes. Did you know you can make baked potatoes in the slow cooker? I also have a favorite slow cooker lasagna recipe. The slow cooker does the cooking while you are getting other stuff done.  It is the perfect kitchen helper.

                                Crock Pot Mac and Cheese

                                This rich and creamy crock pot mac and cheese won’t disappoint. I am always asked for the recipe! I think the two kinds of milk make it extra rich and yummy. This recipe is a great comfort food to take to a friend in need, or a special treat to fill the bellies of little ones. Even those picky eaters!  It tastes like you spent hours cooking it, but with the crock pot doing all of the work (3-4 hours), it will only take you a few minutes of cooking.

                                Slow Cooker Mac and Cheese

                                Crock Pot Mac and Cheese

                                Put ingredients in your slow cooker and forget it until dinner time when you will enjoy creamy macaroni and cheese! YUM!

                                • 1 8 ounce pkg of macaroni (cooked and drained)
                                • 1 Tablespoon oil
                                • 1 13 ounce can evaporated milk
                                • 1 1/2 cups milk
                                • 1 tsp salt
                                • 1 pound Velveeta cheese (cut into cubes)
                                • 1/4 cup melted butter
                                1. Toss cooked macaroni in 1 tablespoon oil. Add all remaining ingredients. Pour into lightly greased crock-pot. Stir well. Cook covered on low for 3 – 4 hours. Stir occasionally.

                                 

                                Your friends and family will be so pleased with this crock pot mac cheese recipe ! They will be asking for it again and again.

                                We don’t eat alot of Velveta at our house, but it really works in this recipe. If you want to try some other mac and cheese recipes you might like my stove top macaroni and cheese and this one pot macaroni and cheese  which is made with cheddar cheese.  Macaroni and cheese seems to be a staple dish in any household with children.  It is also a dish that when it is homemade, is often loved by adults too.  So keeping some dry macaroni, Velveeta cheese, and evaporated milk in the pantry will almost always ensure that you can create a loved-by-all homemade dish at a moments notice.  I think that every cook should have a mac and cheese recipe that they, and those they love will enjoy eating!   It should be a dish that creates warm memories for your kids so that they will someday grow up and declare…”It’s just like my mom used to make” as they bite into some fancy mac and cheese dish at a fancy over-priced restaurant.

                                Friendship bracelets are a great summer craft.  Do you remember making them when you were younger? Bracelet making by far was one of my favorite crafts!  I love the colorful strings, different patterns, and beautiful braids and knots.

                                I remember making them with my friends, trading them at school, and giving them as gifts. I have noticed they are making their way back on children’s wrists lately, and thanks to the Pura Vida Bracelets craze, even teenagers are getting back into the stranded bracelet fun!  If you need some cute nail designs to go with your colorful bracelets, check out these cute summer nail designs.

                                Easy and Fun Friendship bracelets

                                These are different than the macramé knot tying bracelets. These are all done by finger weaving loops.  Depending on which loops you use you get a different bracelet pattern.  The first bracelet it a flat 7 strand braid (which I will demonstrate), the second bracelet is a 4 sided cubed braid.  Both are cute and your little girls will love to make these.

                                These friendship bracelets really aren’t tricky, use this video to get the hang of the technique.  It uses just a couple of easy steps.

                                How to make Friendship Bracelets

                                1.  Start by cutting 7 strands of embroidery floss about 24” long.  Take both ends and tie it in a knot.woven friendship bracelets (8)

                                2.  Pin the knot to a pant leg or pillow.  Separate the stranded loops and put them on your fingers (4 strands on one hand and 3 on the other).

                                3. You will always be working with the hand that has only three strands on it. In the picture above it will be my right hand.  Your pinky does all the work.

                                Depending on how you want your bracelet to look you will loop your pinky under that strand and pull the end loop (#7 and #8) through them all.

                                4.  For the flat braid you loop your pinky through the 2, 3, 6, and 7.

                                5. Then grab that last loop with your pinky (letting go with the pointer finger) and pulling it through the rest of the strands and tighten.  Now you have 4 loops on your opposite hand.

                                6. Shift the loops on your hand with 3 loops on them towards your pointer so that pinky is free again.

                                7. Keep finger weaving back and forth with your pinky until it is complete.  Un-loop all of your fingers and tie an overhand knot in the end.

                                Your kids will be kept busy making embroidery floss bracelets all summer.  I used to have a bracelet making stand and sold them on my street corner for $.25.  Since inflation, I am sure they could get $1.00 for them.  {giggle}

                                Grab a wide mouth canning jar and get ready to print. Download the would you rather questions and print on cardstock. We painted the metal ring to give it some pizazz. We used a DecoArt gloss acrylic paint.  This paint works great on metal. No worries if you don’t have a printer…. just save the photo at the end of the questions and you can scroll through them on your phone.
